I married an Italian who loves to cook-which means I will never be a size zero and I am okay with that. Sure there’s Giada De Laurentiis as an example of a skinny Italian but I am not convinced that she actually eats any of the amazing food she prepares. Despite the fact that my love for food trumps my desire to have a thin physique, I still normally try and not over do it with excess. But even my best intentions get overthrown when my husband prepares something yummy that I have to try. Last night he made Arancini’s but instead of the traditional Italian version, he made them Mexican flavored. He’s really good at fusion cooking and this was no exception-they were amazing!
He cooked taco meat with seasonings and onions then cooked rice. Mixed it together with cheddar cheese and cilantro and rolled it into balls with panko breadcrumbs before deep frying. They were crunchy and crispy on the outside and gooey and yummy on the inside. Arancini’s sort of remind of fair food in that they are deep fried balls of yumminess and make for a tasty snack. We added stuffed peppers and a salad to round out our meal because lets be honest, you don’t want to fill up on these babies! But add some sour cream and salsa to the top and your mind will be blown!
If you haven’t tried the traditional, Italian Arancini I suggest that you do that first. But these are pretty darn amazing too-and a very different take on a fun food!
1 lbs ground beef
1 onion chopped
1 pack taco seasoning
2 cups of cheddar cheese
3 cups of panko bread crumbs
2 cups of rice
1 bunch of cilantro
salsa and sour cream for topping
Fry up the ground beef and onion, mix in seasoning with some water. Cook rice. Mix rice and meat mixture into balls. Roll balls into whisked egg and dip and roll into panko breadcrumbs. Deep fry until fully cooked.
