Anyone who knows me (or read my blog about my award winning chili) knows that I couldn’t be further from the Vegan world. I am a true carnivore in every sense of the word. With that said, I do like to incorporate meatless or vegetarian and some vegan dishes into my life. Not only is it healthier, but it saves money.
I am also always looking for ways to use up my bananas. Funny story. When my now 1.5 year old started talking, one of her first words was “banana”. It seemed as though I could not keep enough bananas on hand to satiate her craving for them! Then one day she wouldn’t touch bananas. She would look at me and shake her head “no” when I offered her one. That didn’t stop her from screaming “BANANA” at the top of her little toddler lungs. I quickly realized that “banana” was her word for food. She didn’t love bananas as much as I had thought, which is a good thing because eating that bananas causes a few other issues if you know what I mean; but that was her way of telling me she was hungry.
I still buy a lot of bananas (maybe out of habit?) but it seems like we can’t keep up our demand with the endless supply we seem to always be sitting on. Because of this, I am constantly looking for ways to use up the bananas that are going bad. I have made my fair share of banana bread which is pretty amazing-especially covered with icing….but something seems so wrong about taking something healthy for you and turning into a sugar filled dessert that doesn’t resemble it’s former self in any way.
Well enter vegan ice cream. It’s still not as healthy as just eating a banana but way healthier than “real” ice cream. And it’s super easy to make. Freeze those banana bad boys that are turning brown. When they are frozen, put them in the blender with some honey and vanilla and almond milk (or other alternative milk of your choice) and blend away until smooth. That’s it. No really, it couldn’t be any easier. You can add a little cocoa for a chocolate flavor but I liked the banana/vanilla version. Give it a try and let me know what you think.
