Chicken and Cauliflower Rice Recipe
If you know me, you know that I definitely have a love/hate relationship with Costco. I absolutely love Costco for the amazing products they provide me and my family. On the other hand, I loath going there sometimes because it’s usually crowded and most of the time people are not on their best behavior as they are rushing to grab the next yummy food sample. However, what I love most about Costco is they provide many healthy eating options which makes feeding my family a lot easier. Enter Cauliflower fried “rice”. I put rice in quotation because this bad boy is more than just yummy fried rice-which it does produce some pretty amazing rice but I am finding all sorts of uses for this awesome stuff.
This being Ash Wednesday, I have decided to commit myself to eating healthier and eliminating sugar-which includes alcohol for the next 30 days. Okay, I realize that lent is longer than that but I never said I was a confirmed Catholic; in fact I am not Catholic at all. However, my husband is and he has introduced many good habits from the religion that we have implemented into our lives. For example, we try really hard to eat fish on Fridays. While we don’t attend church regularly, these habits have become just part of a healthier lifestyle to remind us to eat less red meat, and besides we live it the Pacific North West where we have some of the freshest seafood around so why not?
So while I may not be the perfect Catholic, I am hoping that by committing myself to 30 days without sugar I can shred some of the last baby (cough) toddler weight I have been carrying around for too long. This recipe is super easy and very tasty! Take the pre-chopped cauliflower from Costco, chop up some broccoli, bake 2 chicken breast with olive oil on them, mix broccoli with chopped cauliflower and add about 2 teaspoons of both garlic powder and onion powder, pinch of salt, melt 1 tablespoon of button and pour over mixture then add a packet of ranch. There’s the magic folks. Cut up the chicken into cubes and add it to the mixture along with 1 cup of skim milk mozzarella cheese. Top with another 1/2 cup of mozzarella and bake covered for 30 min. Uncover and bake for another 10 minutes so the cheese gets all bubbly. Yummy! Easy and healthy!
- 2 chicken breast
- 1 bag of Organic chopped Cauliflower Rice
- 2 large fresh broccoli heads chopped
- 2 teaspoons of garlic powder
- 2 teaspoons of onion powder
- 1 package of Ranch dressing
- 1 tablespoon of melted butter
- salt to taste
- olive oil
- 1.5 cups of mozzarella cheese
- green onions chopped for top
